In Rome, ‘Ripiena,’ the new pizzeria dedicated to white Roman stuffed shovel pizza, signed by renowned pizzaiolo and youtuber Massimiliano Ceccarelli, aka Max Crunch, opens. Located in the Ostiense/San Paolo area, at 107 Via Gabriello Chiabrera, just a stone’s throw from Roma Tre University and the Madison cinema, ‘Ripiena’ offers a format all about the tradition of Roman sliced pizza, reinterpreted with creative fillings and great classics.
The new venue
The 50-square-meter space features an essential, modern design reminiscent of the pizzerias of yesteryear, with a large corner counter and an overhead projector listing the pizzas on the menu. Pizza can also be eaten inside, thanks to a snack shelf with stools in front of the counter, while the kitchen, separated by a glass door, houses the electric oven where the pizza is baked.
The dough
The pizza at ‘Ripiena’ comes from a long-rising dough, made from a blend of flours, which ensures a crisp, light base. After baking, the white pizza is filled with mouthwatering ingredients inspired by Roman tradition but with a modern twist. Among the offerings are ‘mortazza,’ porchetta, broccolo romano ripassato, zucchini frittata, tuna sauce, chicken salad, tuna with tomato, mozzarella with grilled eggplant and prosciutto, and ‘Pizza da 10,’ an homage to the famous ‘Gianni al Mattone,’ stuffed with crabmeat, salad, and mayonnaise.
‘Ripiena’ also offers limited-edition special recipes, the result of monthly collaborations with chefs and pizza makers who are friends of Max Crunch, with updates available on the pizzeria’s social media accounts. All pizzas are sold by weight, with a single price of 20 euros per kg.
