Achilli al Parlamento
Achilli is back to shine, and not just because of its brand-new star. Chef Pierluigi Gallo has brought the Roman restaurant back to the Olympus of the Michelin guide with elegant cuisine that knows how to play with tradition without becoming rigid.
Dishes not to be missed include the “Senza spaghetto alle vongole” (spaghetti-filled tortelli), the porchetta pagnottella, and the cod tartare with buffalo milk. The wine cellar is a wine lover’s paradise, with thousands of labels.

Orma Rome
A new star in 2025, Orma is the brainchild of chef Roy Caceres, Colombian by birth but Roman by adoption. The cuisine is a journey between South America and the Mediterranean, with dishes that seem like short stories full of fragrance and color.
