Fans of seafood cuisine, there is something new in downtown Rome. In fact, “Aquamarina” has opened: a new seafood trattoria located inside the luxury hotel Umiltà 36, in Rome’s Trevi district, near the Quirinale. This restaurant is the newest addition to the SHEDIR Collection, which also includes the Adelaide-Vilòn and Don Pasquale-Maalot restaurants. Aquamarina stands out as the first restaurant in the collection dedicated exclusively to seafood.
Aquamarina’s ambiance is “literary,” with a library dedicated to the sea that contains poems, fairy tales and stories, as well as art objects and paintings related to the marine theme. At the entrance, a sculpture of a cheetah welcomes visitors, evoking a colonial and poetic flavor. The restaurant’s atmosphere is further enhanced by decorative elements such as sea turtles and octopuses made of Murano glass, vases that evoke the waves of the sea, and colorful fish made of handcrafted ceramics.
What to eat.
Aquamarina’s menu focuses on the flavors of the sea, with dishes that include fresh crudes, tartare, carpaccio, and traditional seafood classics such as risotto with langoustine cream and fettuccelle with Sicilian red shrimp. Main courses offer different cooking of fish. Specialties include squid with peas and mint and fried paranza.
The kitchen is led by chef Fabrizio Leggiero, known for his expertise with fish and simple but precise cooking. The wine list, curated by Martino Grassi, offers about 80 labels with a preference for Italian and French bubbles. Find the menu with prices here.
