The Spaghetti all’Amatriciana Festival began as a celebration of Amatrice’s traditional recipe, a dish rooted in the lives of transhumant shepherds in the Laga Mountains. The original recipe called for “ad archetto” pasta, guanciale and pecorino cheese, without tomatoes, which were introduced only later after tomatoes were brought to Europe from the New World.
The sagra was first held in 1966 and has since become an iconic event in the town!
