Iginio and Nicola Massari reinterpret one of the undisputed symbols of Roman pastry-making by offering a unique seasonal alternative: the summer maritozzo . The iconic dessert, famous for its generous cream filling, now features a cold center for the warmer months, designed to enhance the dough without weighing it down.
What’s in the new summer maritozzo?
This new creation is not just a limited edition, but a true tribute to seasonal ingredients, born from a collaboration with Raffaele Del Verme, the renowned master gelato maker at the Di Matteo gelateria in Torchiara, in the Cilento region.
The real revolution of this dessert lies in the filling. Instead of cream, it features gelato made with Fuscella di Napoli. Unlike ricotta (which is obtained by re-coagulating whey), Fuscella is distinguished by its soft texture and delicate flavor.
The gelato created by Del Verme is low in sugar and fat. It’s fresh, light, and visually almost identical to classic whipped cream.
Where, how, and when
The new summer maritozzo preserves the structure and identity of the original dessert while offering a new experience for the palate. It can be found at Iginio Massari’s pastry shop in Rome (Galleria Alberto Sordi).
Price: €6 for takeout and €7 for dine-in.

Other summer desserts
The Massari family celebrates the warm season with a new summer treat: the artisanal ice cream popsicle. Designed to cool you down on hot summer days, this new ice cream is the perfect companion for strolls through the city, a refreshing break while shopping, or to make the wait before a trip even more delightful.
The Massari family has come up with some intriguing flavor combinations. Among the flavors offered is the white chocolate stick, enriched by the crunch of chopped pistachios and the unexpected freshness of a strawberry gelée center. Also worth trying is the fior di latte flavor, which blends with notes of salted caramel.
