In the heart of Rome, a beautiful space for lunch or dinner has opened in recent years. It is one of those places where you go to pamper yourself and savor haute cuisine. We are talking about the gastronomic project of chef Roy Caceres, already known for the success of Metamorfosi. The Orma restaurant quickly made its mark, earning a Michelin star just seven months after opening.
The Orma experience

Roy Caceres offers “borderless” cuisine, blending his South American roots with Italian gastronomic culture and international influences (such as Syrian). His philosophy is based on simplicity, aiming to enhance the raw ingredients through innovative techniques (such as the use of a rotary evaporator).
In addition to the two or three-course business lunch options, there are two menus to choose from. Tracce Indelebili (€152) is a five-course experience featuring the chef’s signature dishes: squid tripe; cauliflower and truffle; fregula, sea urchins, and XOrma sauce; black sheep; Malaga.
The Tracce Correnti (€192) is an experimental 7-course journey representing the current evolution of his cuisine. Pumpkin, myoga, and bay leaf; almond, lentils, and oyster; ceviche/corn/spaghetti; “Pardula” Crusco and capers; Kombujime fish and elderflower beurre blanc; Tamal, beef and Muhammara; Plantain & Guanabana. Two euros are donated to the organization “Action Against Hunger.”
The Ambience
The restaurant’s design is modern and elegant, characterized by sinuous lines and natural materials such as wood, stone, and copper. The tables are carved with a bas-relief footprint that holds the bread and butter dishes.
