Just take the overnight Intercity, provided by Trenitalia every weekend, to reach San Candido. The municipality in the autonomous province of Bolzano is a winter resort where it is possible to ski, hike in the snow and eat regional dishes in mountain huts.
Rides to reach the snow are scheduled on Fridays and Saturdays, those back to the capital on Saturdays and Sundays.
Night Intercity 764 departs every Friday at 10:55 p.m. from Roma Termini and arrives in San Candido at 10:55 a.m. The journey takes 12 hours and involves two changes: in Brixen one takes the bus to Bruneck and in Bruneck the regional bus to Innichen. The return trip leaves at 6:35 p.m. and arrives in Rome on Monday at 6:06 a.m.
What are the services? Reservable 2nd class service, sleeper car, couchette car, minibar service along the train. Tickets can be found from 36.90 euros, depending on when you book.
Another solution would be to take the direct train to Bolzano (no changes, duration about 5 hours) from Roma Tiburtina and then rent a car to reach the ski resort.
