Marco Quintili, already known for the brand “I Quintili,” has launched his new venture called Fina F ina. The first pizzeria in this new vein is located near the Caffarella Park.
Quintili, originally from the province of Caserta, began his adventure in the capital in 2017, opening his first pizzeria in the eastern part of Rome. Today he has several pizzerias in the city, which he runs with the support of his wife.
Fina Fina Pizzeria
This new challenge involves creating an innovative dough. As reported in Il Gambero Rosso, Fina Fina ‘s pizza is the culmination of a project begun in May 2023 in collaboration with Molino Magri to develop a type zero flour with a high fiber content, ideal for the dough’s high hydration.
The pizza features a diameter of about 35 centimeters, and the loaf weighs about 230 grams but is incredibly light. It has a thickness as thin as a Roman pizza and a barely noticeable crust.
The menu offers a selection of classic pizzas such as margherita and marinara, 7 in total, as well as creative variations with seasonal ingredients (11 signature pizzas). Before the pizza, customers can enjoy crispy fried foods such as golden squash blossoms. As Gambero Rosso informs, the proposed margherita costs 8 euros, the average price for appetizer and pizza does not exceed 20 euros. The restaurant offers 80 covers and the possibility to enjoy these delicacies both at lunch and dinner.
To ensure perfect baking, a special oven with refractory soil has been designed that maintains the temperature between 300 and 330 degrees Celsius. Accompanying the pizzas is a selection of Italian and French wines, with a focus on bubbles, as well as Baladin craft beers.
